Ingredients like cumaru, ikiriba, pacovão, tucupi, jambu, pirarucu, baniwa, açaí and cupuaçu are undeniably native Brazilian. And they are a statement of how many Brazilians don’t devote enough attention to the many flavors that our land offers. But at the restaurant Espírito Santa I had my patriotic taste buds fired up. The organic collard green wraps stuffed with vatapá made with banana, rather than with bread, was the highlight of the day. Special mentions also go to the rice paper rolls stuffed with shredded duck served with tucupi (a sauce extracted from the manioc root) and the traditional Brazil nut-crusted pirarucu fish. I am sure you too will find Espírito Santa a great place to spend some leisure time.
