Personal chef Mark Sanne traveled from his home in East Hampton to meet me in New York and show me Kalustyans, a food market founded in 1944 where he buys spices, seasonings and teas from all over the world for his recipes. The store is open to the general public, but it is considered a treasure by local chefs. Mark appreciates exotic flavors and cross-cultural fusion. It is only natural for the son of a Japanese mother and an American father of Norwegian descent. Mark spent a year studying in Brazil as a teenager and returns at least once a year as he loves our varied cuisines and culture. Notice the labels on the products pictured in this session, which show the variety of colors from the cultures that also express themselves through flavors and spices.
